From a young age, I’ve been fascinated by food, nutrition, and cooking as a creative expression of health. Working in a variety of restaurants in high school taught me just how empty calories can be even though they make people happy. Fast forward 35 years, and most food—prepared outside AND inside of the home—is industrially designed to create addictions to fat, sugar, and salt. “Comfort food” is really a euphemism for pleasure/reward consumption.
It’s time to turn a new leaf. Time to make nutrient-dense food that’s locally sourced, organic, and really really tasty! For some folks, exposure to different culinary options is a welcome form of adventure, and for those who are already health-conscious, I want to provide you with the same convenience, portability, and satisfaction that your peers have had since the dawn of food trucks and street vendors.
New Leaf Eats is designed to be easy to grab on the go after a hike, ski, or other outdoor adventure. Every component is handmade with attention to absorbable plant proteins, high fiber veggies offsetting complex carbs, and the only added fats are coconut, olive, and avocado oil. Happy trails and hope to see you soon!
